A deliciously light rosé from the Côtes du Roussillon made primarily from Grenache Gris grapes (that’s why a wine can be called Gris) with a complement of Syrah.
The vineyards stand on soil with a lot of rocks and limestone that give a nice minerality to the wine. Combined with notes of red fruit from small wild strawberries and currants, a delicious light rosé is created that can rightly be called a Provence killer. And all that for half the price.
Because of the warm temperatures in southern France, the grapes are picked at night to prevent oxidation and the addition of a lot of sulfite is not necessary.
This wine should not be missed on the terrace or in the garden this summer.

The chardonnay grape matures in the Languedoc under almost ideal conditions. The grapes for this wine come from roughly the same area as those for Saint Baurois Viognier, from vineyards around the cities of Narbonne, Beziers and Montpellier, from the same winemakers as Dumanet Chardonnay. The clayey soils in the lower parts of the Languedoc are an ideal substrate for planting chardonnay, as this grape needs a soil that retains moisture well. This makes for a wonderfully fruity and wood-aged Chardonnay here, with a hint of vanilla. But the fruit remains paramount here. A successful example of what the Pays d’Oc has to offer in terms of delicious white.

The domaine stretches over 30 hectares and is planted only with Sauvignon Blanc. The terroir consists mainly of mineral rich rocks (caillottes means boulder) ranging from calcareous boulders (Cailottes), fossil rocks (pierres plates fossilisées) and silex (flint). These soils guarantee rich mineral wines.
The Pabiot family’s range of wines is not large but the quality is all the higher. With the yield of the grapes from their own vineyard, the most beautiful Pouilly Fumés are made with the Pouilly Fumé “Kiméride” as the top piece.
Because Sancerre is only a stone’s throw away from Pouilly Fumé, Alain also wanted to make Sancerre. A completely different wine because of the great differences in terroir. He went looking for the right vineyards where he could buy grapes.

The name Kimeride refers to the geological era where the soil in Pouilly was formed that is now so characteristic of these wines.
The Kiméride is produced only in the best vintages with only the grapes from the older vines being manually selected.
Guarantee a “mature” Pouilly Fumé with notes of ripe fruit and a long finish.
The wine matures for two years on its own lees in stainless steel barrels.
